What do you do with all those seeds that you are tempted to throw in the trash? Create a healthy snack or a topping for soups and salads! Guess What? Pumpkin seeds are very nutritious, plant-based foods and help boost the immune system; they even have 8.5 grams of protein in 1 ounce of seeds. What a great snack for you and the kiddos.
So here’s what you do:
-Rinse and dry your pumpkin seeds
-Preheat oven to 375 degrees.
In a mixing bowl, coat the seeds with ½ ounce of olive oil and season with your choice of spices. We like them spicy so our mixture is sea salt and cayenne, garlic powder and cumin.
[Another option is a sprinkle of rosemary, sea salt and remember to coat first with olive oil.]
